怎樣蒸陽澄湖大閘蟹,做法有哪些?

先用酒醃牠(灌醉),去腥及土味兒!

炒鍋忠大火煮水,裝盤隔水蒸(水蒸氣上升後),月20分鐘熄火,續悶5分鐘後取出,蟹肉才不會蒸的太老,有失風味。

荷葉鋪盤,上置大閘蟹,荷葉香增添風味。

酒可分:米酒或紹興酒(較貴,風味兒較高檔)

吃原味,沾醬,鹽椒粉,那就依個人喜好囉。

記得,下鍋前一定要幫大閘蟹輕輕的搓洗全身,更能吃的安心呢~~~~~
