單親媽創業 小喜餅有特色

〔自由時報記者林嘉東／新北報導〕萬里區蔡濬宇四年來成功輔導兩百多名單親媽媽就業，幫助她們自立自強，她最近又帶領單親媽媽研發「小喜餅」糕餅，希望繼萬里蟹之後，成為另一項地方特色商品。

蔡濬宇說，「小喜餅」餡料取自當地農產品冬瓜、南瓜子仁，添加杏仁、葡萄乾、鹹蛋黃、芝麻仁、核桃仁、腰果仁、桔乾蜜餞、乳酪等多種食材，經過兩年來不斷試吃、改良，才研發出鹹中帶甜、甜中帶鹹的新口味；每塊小喜餅有多達十一種口味，每咬一口都有不同的驚喜。

蔡濬宇擔任「台灣快樂姊妹花協會」理事長，單親媽媽都喊她「蔡老師」，她從九十八年起關懷單親媽媽，得知單親媽媽最需要的是經濟補助與就業機會，已協助兩百二十六個單親家庭度過經濟難關。

「幫單親媽媽申請政府補助，不如協助她們創業。」蔡濬宇說，這群單親媽媽不但要賺錢養家，還要撫養小孩，充滿母愛、樸實與吃苦耐勞的精神，每個單親媽媽都讓人敬佩。
